    Default Today I Cooked...

    Just an idea - if you've whizzed up something yummy for dinner, particuarly if it was an improved effort, please share it with everyone to give us meal ideas!

    Alternatively, just put what you had today - this thread might shame us all into eating better on those days we only manage frozen chicken dippers and chips (and I'm afraid that was me the night before last!).

    Not today, but on Tuesday I whizzed up a yummy sweet and sour beef noodle dish. Here's what the Waggamamma cookbook put me through!

    Mix soy sauce and cornflower, then add boiling water and a chicken stock cube and some Japanese Mirin. Mix and put to one side!

    Slice up sirloin beef and a red de-seeded pepper.

    Fry 2x cloves garlic and 3cm peeled ginger, sliced into tiny bits, in a wok. Chuck in the beef and pepper for 3 mins.

    In a separate pan, fry some egg noodles.

    Turn the heat down and add the soy sauce mix from earlier. After another three minutes put the noodles in the wok, add slice spring onions and the juice of one lime.

    Serve after another minute of frying!

    Tonight I am stewing some rhubarb for a tasty dessert. I adore stewed fruit and custard (or ice cream) but I rarely get round to making it- despite it being really easy and cheap to do.

    Sounds lovely Si, can I have some? I love Rhubarb.

    Mr Rayner is working late tonight and tomorrow, so some canny thinking has been required. The planned chicken and pasta has been put on hold, as it can't be "split up" and we might need to eat at different times. So I've shelved that and made Coq O Van (mainly so I can be hilarious and ask him if he wants some Coq when he gets in) which is simmering away in the oven. If he's wildly late, I can eat half and leave half for him later. If he eats at work, I'll eat half and have half tomorrow. If he's late tomorrow and too late to go away for the weekend, I've got pies. If he's late tomorrow but not late enough to eat away, we'll save everything for next week. If he's not late at all tomorrow, we can have the pasta.

    Now that's planning.

    A bed of baked beans... you can't beat the classics!

    More from the Wagamama cookbook last night, Sweet and Sour Prawns. It involved making an omlette in a wok, strangely enough.

    Also featuring were a handfull of beansprouts, chili, egg noodles, Fish sauce (nam pla), garlic and prawns.

    Sainsbury's didn't have unsalted peanuts, or limes when we went on Sunday. So we had to source those from elsewhere. The peanuts were bought in a peanut and raisin pack (I picked out the raisins) and the lime came from the co-op.

    Back to the Waggamamma cookbook for Monkfish and Coriander noodles. I had to marinade the monkfish in garlic and ginger overnight, with soysauce and fishsauce. Then there were a few more complex things to do before it turned out, but it was well worth it! Yum.

    Pudding was strawberries, raspberries and cream. We are piggies but we luv it.

    I cooked chicken in a mild korma sauce, with rice and Naan bread. It irritated me that it was veg free so I mixed peas with the rice, to which there were objections from some quarters. However, I noticed it all got eaten.

    Today I did a "special" - fried bread (fresh on one side, fried golden in olive oil on the other) with a fried egg on, with baked beans, potato wedges and button mushrooms fried in butter and garlic.

    It was lovely!

    If that's meal had had waffles instead of wedges, that'd be a classic West Hampstead Special (as Steve calls it!).

    We had delish Bananas in Custard for pudding tonight. Yum!

    I've gone right off waffles in recent years. I used to love them but they just taste bland and horrid these days.

    Pleasingly, my favourite wedges are the Tesco own ones - 55p a bag! - the McCain spicy ones arn't half as nice.
